I'd recommend the Roadmaster # RM-521453-5 base plate that you've looked at. The skid plate, or rock guard, as Roadmaster calls it would need to be trimmed to allow the base plate attachment arms pass through it , and then reinstalled. I've linked to the installation instructions for you to look over and I've also linked to an installation video.
In addition to the base plates, you'll need a towbar like the Falcon All-Terrain, # RM-522, safety cables such as # RM-643, a supplemental braking system like the Roadamaster Invisibrake, part # RM-8700, a wiring kit like # RM-15267 and possibly a high/low adapter if the installed height of the base plates has more than a 3 inch height difference from the receiver on the motorhome.
