Dear E-trailer, Have always ordered my hitches and wiring from you as your the best. Looking to install a Curt hitch on my 2020 Outback . As Im planning to tow a tear in the same range ~2000#, 200-250# tongue weight which is under the capacity of the Onyx XT I was going to go with the Curt and likely the Curt echo ill have trailer brakes.

The Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # C67JR is a great option for your 2020 Subaru Outback. The hitch installs between the frame and the bumper using the same hardware from the manufacturer, so it won't impact the frame as it actually may further stabilize it. As long as you are towing within the capacity of the vehicle, any issues that could arise would be covered under the Magnuson–Moss Warranty Act. I recommend doing a search and reading up on it. The OEM hitch changes the brackets and the cross tube replaces the bumper so it is more in-depth at installation but It won't change the function or the pull on the frame.
For your wiring, I recommend using the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118467, the # ETBC7L, and then the Curt Echo Wireless Trailer Brake Controller # C51180 you referenced.
Finally, whether you use the OEM or Curt receiver, I recommend using the B&W Tow & Stow 3-Ball Mount - 2" Hitch - 3" Drop, 3-1/2" Rise - 10K - Black # BWTS10047B along with the Anti-Rattle Trailer Hitch Receiver Lock for 2" Hitches - 2-5/8" Span # 63232.
