I'm interested in a class 3 hitch for my 2020 Chevy Colorado. What's the difference between the Curt and the Etrailer hitch? Which would you recommend?

The differences between the Curt # C13203 and the etrailer branded # e98909 are primarily cosmetic. Both hitches would be mainly concealed behind the bumper, with only the receiver tube and the safety chain hooks being visible. The Curt uses a round tube crossbar with a glossy finish, the etrailer brand hitch uses a square crossbar with a matte finish. The cosmetic appearance really won't matter much as most of the hitch is concealed anyway.
The Curt hitch has s higher capacity than the etrailer brand, but since the truck has a maximum towing capacity that's less than that of the hitch, and you'll need to observe the lower of the two capacities, this is a moot point as well.
Both hitches install in the same manner as well, so there's really very little difference between the two. You could flip a coin or go with the least expensive of the two and not need to feel like you sacrificed anything by saving a couple of dollars.
To complete your towing setup, you'll need a trailer wiring harness, ball mount and trailer ball. For wiring, use # HM40975-11998 (installation video is linked). For a ball mount, use # C45010 and # 19260 for a 1-7/8 inch ball or # 63845 for a 2 inch, and finally a pin and clip like # C21500.
