I understand that this will switch to my inverter power Will this switch back to shoreline when power is restored Installing outlets in a fire truck for power tool battery charging

Yes.
The Go Power Automatic Transfer Switch with Quick Connect Cables - Plastic Case - 30 Amp - 120V # 342GPTS will always run off shore power if it is present. Once the shore power is cut off it will switch automatically over to the inverter power. Once it senses shore power is restored it will switch back to it.
