Hey Carl, thanks for reaching out. The best trailer hitch for your 2025 Mitsubishi Outlander PHEV is going to be the Curt Class 3 Hitch # C86FV. It has a 2" receiver, a 2,000 lb towing capacity and 200 lb tongue weight capacity. This will work great for a bike rack, cargo carrier, or small trailer.
For a wiring harness I recommend the Curt T-Connector # C56434 which is confirmed for the PHEV models. This will plug in behind the taillights and give you a 4-flat connector for a trailer. If you plan to tow a trailer, I also recommend the etrailer Adjustable Ball Mount # e66PR.
