Hi, Im wanting to add a hitch and 7 pin wiring to a 2011 ML 350 4Matic. I am going to be towing about 2k lbs with it, and I know that retrofitting the OEM hitch and electrical are notoriously complex, do you know if I can just do a basic wiring setup and be able to get the electrical all working? Im hoping to not get too far into the weeds thanks!

You can definitely go the aftermarket route which will require some splicing but isn't overly complicated. We also have installation videos you can use as a reference to make things easier. For a hitch you can use the Curt # 13342 as long as you don't have the BlueTEC. This features a bolt-on installation and comes with a lifetime warranty.
For wiring, you're on the right track with the # ETBC7. However, you need to start by installing a 4-way with # 119147KIT. Once you have a 4-way you can upgrade it using the # ETBC7. This comes with the adapter and everything else required for installation. For a ball mount, check out the Curt Towing Starter Kit # C45534.
I have attached some videos below for the wiring installation. We haven't had a chance to install this hitch before so we don't have a video to help but the written instructions are clear and easy to follow.
