For your 2021 Jeep Cherokee Latitude edition, I definitely recommend the Curt Trailer Hitch Receiver - 2" # C13395. Not only will the Curt hitch fit your Latitude model, but it also provides you with 675 pounds of maximum tongue weight capacity and 4,500 pounds of towing weight capacity. Also, with the gloss outer coating over the base powder coat, the Curt hitch provides you with more rust and corrosion resistance than competitor options. As far as installation, the hitch only takes about 50 minutes to install and comes with all hardware required for a bolt-on installation.
If you need help with the installation process, I went ahead and attached a video that walks you through the installation of a 2020 model Cherokee. Your installation on your 2021 model will be nearly identical.
