For your car hauler I highly recommend the Stromberg Carlson Electric Trailer Jack - Drop Leg - A-Frame - 23" Lift - 5,000 lbs - Black, Item # JET-5000. This is a high-quality jack with a robust 5,000 pound weight capacity. This capacity is much more than what's actually needed for the tongue weight of your 7,000 pound trailer but the healthy safety margin is going to allow the jack to work well under its limit. This will lead to faster operation and a longer lifespan since it won't be under constant stress.

The jack provides a total lift of 23 inches (18 inches from actual travel and 5 inches from the drop leg) and has an outer tube diameter of 2-3/16 inches. I have attached a short video review that you can check out as well.

If you instead wanted to stick with a manual jack I really like the Buyers Products # 3370091265 which features a 5,000 pound weight capacity, 15 inches of travel, and a weather-resistant coating to keep it rust free out in the elements.
