HOW CAN I WIRE THIS ELECTRIC JACK INTO A 7 PRONG PLUG? CAN YOU BUY A 7 PRONG PLUG WITH WIRES SO I CAN SODER THE 2 WIRES ONE GROUND , ONE HOT?

The Stromberg Carlson Electric Trailer Jack - Drop Leg - A-Frame - 23" Lift - Item # JET-5000 that you referenced only has one wire that runs from it, the power wire. This wire would need to get run to the 12 volt accessory circuit of the 7-way on your trailer's wiring. The jack grounds through the mounting hardware of it so you would not have to run a ground wire.
If you only have a 4-way on your trailer you will need to upgrade that to a 7-way like the part # HM20048. I attached a wiring diagram that shows how the 7-way would wire to your trailer.
