How does the 2014 wrx hatchback tow with a full load 2000 pounds or at least 1500. I want to make sure that my car can tow a trailer around that weight

According the online version of the owner's manual for your 2014 Subaru Impreza WRX Hatchback (page 8-13) Subaru says that your vehicle is not designed or intended to be used for towing a trailer.
The reason there are trailer hitches like the EcoHitch # 306-X7261 that you referenced is for accessories like bike racks and cargo carriers. I wouldn't know how your vehicle would handle or perform under the 2,000 lb max weight of the trailer hitch as trailer hitch manufacturers only test their product and don't take into account any weight ratings (or lack thereof) for the vehicle.
If you still choose to tow a trailer with your Impreza then you also need the wiring kit # 119250KIT for your trailer lights and then a ball mount kit like part # 989900. Be sure to check out the linked ball mount article to ensure that the drop/rise of the ball mounts will be correct for your application.
