What will the hitch height be when a Class III hitch is installed on a 2012 Volvo XC70?

The Draw-Tite Max-Frame Trailer Hitch Receiver - Custom Fit - Class III - 2" # 75916 will give you a hitch height of 14-1/4 inches from the ground to the inside top of the receiver. That means you will have a ground clearance of 11-3/4 inches at the hitch.
The Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # 13266 will be slightly shorter at 13-1/2 inches to the inside top of the receiver giving you 11 inches ground clearance at the hitch.
If you will be towing with this hitch, I recommend the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118774. This will connect to your factory wiring found in your rear cargo area and then a hot lead wire is run to your battery. I've attached an article to assist.
For a ball mount, I recommend the etrailer.com Ball Mount Kit for 2" Hitches - 7,500 lbs # 989900 which will give you options for different trailers. I've attached some videos to assist.
