We have a blue ox tow plate on our Acadia and stowmaster 5000 towbar. is there an adapter?

The Roadmaster/Blue Ox adapters you referenced, parts # RM-031 and # RM-031-5, do not fit the Stowmaster tow bars. The Blue Ox base plates # BX1675 for your 2008 GMC Acadia are designed for use with motor home mounted tow bars and not car mounted tow bars like the Stowmaster.
Further, your 2008 Acadia may weigh too much to allow use of any tow bar adapters, which are only rated for use with vehicles up to 5000-lbs.
A better and safer option is to use a directly-compatible Blue Ox tow bar like their popular Alpha, part # BX7380, which is rated to 6,500-lbs. This tow bar includes the required safety cables.
The linked article on flat towing explains the other components required for safe and legal flat towing, which include a lighting/wiring kit and a supplementary braking system. Among the simplest and most cost-effective lighting kits is the magnetic type, such as the # TLL21RK from Optronics. A popular supplementary braking system is the Roadmaster Even Brake # RM-9400.
