I have a 2016 Honda odyssey. I need a 7 way trailer hook up but my van does not have the factory towing package. What are my options?

To add a 7-Way connector to your 2016 Honda Odyssey you will need to add two different wiring harnesses. The first harness you will need is the Curt T-Connector Vehicle Wiring Harness item # C56378. This harness is custom fit and plugs into existing wiring behind the driver's-side interior trim panel in your rear cargo area.
The second harness you will need is the Universal Installation Kit for Trailer Brake Controller item # ETBC7. The kit includes a pre-wired 7- and 4-way trailer connector that mounts easily at the rear of your vehicle with an included bracket. This kit is designed for use on a vehicle with an existing 4-way flat trailer connector and plugs directly into it.

If you need a 7-way you will also most likely need a brake controller. The Tekonsha Prodigy P3 Brake Controller item # 90195 is a great choice for your set up. This is a proportional controller that activates your trailer's brakes in response to your Honda's deceleration.
