The first thing you will want to do is consult the owners manual for your 2001 Jeep Cherokee to make sure that it can be flat towed and if there are any special requirements or procedure.
To flat tow a vehicle there are 5 items you will need: base plates, tow bar, safety cables, lighting, and supplemental braking. For base plates, personally I like the Demco kit, # DM9518010. Everything is included to bolt them to your Jeep and they're made in the USA.
For a compatible tow bar look at the Demco Commaner, # DM9511010. One of the bonuses of going with this tow bar is that it includes safety cables which you will need anyway. I have linked a video review of the tow bar.
With the first 3 items out of the way the next thing you will need is lighting. The easiest solution that also does not require cutting into the vehicle wiring to install is a magnetic kit, # RM-2120.
And finally, most states now require a supplemental braking system on the vehicle being flat towed. I recommend the SMI Stay-IN-Play DUO # SM99251 because after installation you will not have to reset it up again.
I have included some additional helpful links on flat towing for you to view.
