You are correct when you say that the owner's manual for the 2021 GMC Sierra 1500 AT4 says that you shouldn't use tire chains on the standard-tire size 275/65-18. The reason why manufacturers have this listed is to wash their hands of any liability just in case something interferes with the struts or other components in your wheel wells. This is very common.
With that being said, the Titan Chain Alloy Snow Tire Chains - Diamond Pattern - Square Link # TC2327 are confirmed to fit 275/65-18 tires on your 2021 GMC Sierra 1500. In order to know for sure if you have enough room in your wheel wells for the Titan Chains, I recommend measuring from the inner edge of your tire to the vehicle itself. If that measurement is at least 15mm, you will be fine. I attached a photo of this measurement to give you more perspective.
In all consideration, the # TC2327 are the best because they will give you the grip you need without having to go to the generally less-effective snow tire cables like the Titan Chain Diagonal Alloy Cable Snow Tire Chains - Light Truck # TC751DC. Also, the # TC2327 is safer than heavier chains because of the wrap-around single cable that installs on the inside of the wheel well. All other chains have actual links in the wheel well (which are more unpredictable and have more overall movement).
I went ahead and linked a photo of the # TC2327 installed on the inside of the tire.
