As long as your 2021 Chevrolet Colorado ZR2 has the transfer case with neutral and 4 Lo it can indeed be flat towed.
You will need a few components to get you out on the road starting with a base plate kit of which I recommend the Demco Tabless Base Plate Kit - Removable Arms # DM9519319 as long as your ZR2 is not a Bison edition.
For a compatible tow bar I recommend the Roadmaster Falcon All-Terrain # RM-522 which is one of our most popular tow bars due to its 6000lb weight capacity, and its non-binding arms that allow you to quickly and easily unhook your tow vehicle even on un-even terrain.
Moving on to tow bar wiring I recommend the Roadmaster Diode 7-Wire to 6-Wire Flexo-Coil Wiring Kit # RM-15267 which will add a 6-way connector and the included 7-way to 6-way cord will plug into your RV to power the lights on your ZR2 when it is being flat towed. The included diodes will protect your factory wiring from back feed and damage.
For a supplemental braking system I recommend the Blue Ox Patriot # BLU37TR due to it having a simple install, and since it is completely removed from your vehicle when you are done flat towing it can be used in multiple different towed vehicles if needed. You will also need the 12v Outlet Kit # RM-9332.
Lastly you will more than likely need a high-low adapter to level your tow bar to your tow vehicle so I have included a link to a helpful article that goes over how to measure for the correct adapter, and a link to all of our high-low adapters for you to take a look at.
I recommend checking the page 299 of your owner's manual which goes over the special steps required to make your vehicle ready to be flat towed.
