I am looking at purchasing a 2021 Chevy Traverse. I would like to find a plug and play brake controller. What would you recommend?

Since the 2021 Chevrolet Traverse does not have a factory 7-way connector option you will need to add one. I recommend installing the # ETBC7L and then using the Curt Echo Wireless Trailer Brake Controller # C51180.
The # ETBC7L will require a 4-way connector to be installed, so I recommend seeing if the vehicle you are looking at has one installed, if not you can use the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118761 which is a plug and play installation that you can see being installed on a 2020 Traverse in the included video.
I included a video that goes over the installation of the # ETBC7L, and once it is installed you simply plug the Curt # C51180 into the 7-way connector when you need a trailer brake controller and control it with your smartphone. This option keeps you from having to drill holes inside of your brand new vehicle.
If the new Traverse you decide on does not have a trailer hitch receiver I recommend the Curt Trailer Hitch Receiver # CU29FR.
