I looked up the owners manual of your 2012 GMC Canyon online and under the recreational towing section it does not state that you'll need to disconnect the battery. Here are the full instructions there:
Position the vehicle being towed behind the tow vehicle and shift the transmission to P (Park).
Turn the engine off and firmly set the parking brake.
Securely attach the vehicle being towed to the tow vehicle.
Shift the transfer case to N (Neutral).
Release the parking brake only after the vehicle being towed is firmly attached to the towing vehicle.
Turn the ignition to LOCK/OFF and remove the key — the steering wheel will still turn.
The base plate kit part # 3122-1 is a confirmed fit for your truck as well and would work great with a tow bar like the Falcon part # RM-520.
