So, What is the definition of a Modular trailer wheel vs. whatever other kind there is?

The term modular refers to the style of holes that you see in the rim. The mod or modular wheels have 10 smaller holes that are just to the outside of the mounting flange. It's basically an appearance thing. Spoke wheels have more triangular holes in that location.
