Need to replace the factory 1 7/8inch hitch with a 2inch receiver hitch on a 2016 Chevy Equinox LT 6 cylinder. Also need to replace the 4-pin wiring with a 7-pin connector, if that is possible. The CURT hitch model 13591 seems to be the right hitch, but what wiring kit do I need?

I can help you get exactly what you need for your Equinox. You are correct that the Curt 2 inch trailer hitch # 13591 is confirmed to fit your 2016 Chevrolet Equinox.
The wiring harness that will adapt your 4-way to a 7-way is the # ETBC7. This kit will come with everything you need to equip your Equinox with a 7-way and 4-way connector.
If you plan on towing a trailer with brakes you will need a brake controller to properly control them. The Tekonsha P2 # 90885 is a great brake proportional brake controller. A proportional brake controller means it senses how the tow vehicle is slowing or stopping and applies the trailer's brakes with the same intensity. This is the best selling controller on the market because of how easy it is to setup and use, and how well it works. The P3 # 90195 is like the P2's big brother it has all the same great features but it also comes with a full display screen instead of codes that need deciphering. The brake controller (P2 or P3) will include a universal wiring harness that will connect to all the connections needed, so you will not need another adapter.
Other items you will need when towing a trailer is a ball mount and ball. This will depend on the trailer and your vehicle. I have linked a Help Article that will show you how to measure for the right rise or drop to determine the proper ball mount and ball for your vehicle and trailer. Since you do not have the hitch already installed on your vehicle, I can tell you that the inside height of the Curt # 13591 is 15 inches. We do offer a common ball mount kit # 989900. We have determined through customers that these are the most common ball mounts and balls purchased. For added security customers will also purchase a hitch lock like # e98880.
