is this fixture safe for using with drinking water?

If you are okay with drinking from a garden hose then the Camco Quick Hose Connect w/ Auto Shut-Off # CAM20135 that you referenced would work well for you. It's made of the same material (brass), as the fittings of a garden hose so you would be just fine drinking out of it.
