Question:
I have read in some other posts that on older Chevy Equinoxs that the dealer has to program the vehicle for this plug to work. Is this true or will it work as soon as I plug it into my 2014 Equinoxs quick connect?

The Curt T-Connector Vehicle Wiring Harness # C56210 that you referenced is intended for the Chevrolet Equinox that has the factory tow package. The connection point for this harness is behind the driver-side rear trim panel.
The only thing you may need to do to activate this harness is install the required tow package fuses and/or relays IF they are not already in place. Check the power distribution box under the hood for any empty fuse holder location labeled 'trailer' or 'tow'. If your Equinox has the factory tow package then these should be in place already.
If your car does not have the tow package you can still install a 4-pole harness independent of the existing wiring by using a kit like # 56094 which simply plugs in at the vehicle tail lights to provide you with a 4-pole trailer connector. This type of installation bypasses the tow package wiring. The linked video illustrates this installation.
