Can I upgrade from 600 to 800 to 800 to 1200 spring bars if needed?

Welcome back Jeff!
You can definitely change the bars in your Blue Ox 2-Point weight distribution system. This uses the same head across all 3 weights. so that will be perfectly fine to do. I have all three spring bars listed below as well:
