I just purchased a Grand Design Imagine XLS 23 LDE with a dry weight of 5,831 pounds, GVW of 6,995 pounds and a hitch weight of 621 pounds and I currently have 6,000 pound bars on my hitch from my previous trailer, do I need to upgrade my entire hitch, or can I just buy 8,000 pound bars? I have the E2 round bar system.

Hey Terry, congrats on your new trailer! Your Fastway e2 Weight Distribution System item # FA94-00-0600 is going to top out at 600 lbs of tongue weight so you'll definitely want to upgrade those round bars. You won't need to purchase an all new system.
The 800 lbs Replacement Round Spring Bar item # FA94-02-0899 is exactly what you'll need. They're sold individually so you'll need to pick up two. These work with tongue weights up to 800 lbs and you won't be overrated using these with 621 lbs of tongue weight.

I have a 25 ft Surveyor with a 7000 lb GVW and 720 lb tongue weight. The 800 lb bars are what my dealer setup and I am very happy with them. You do have to make sure they are locked in place as I have lost 2 of the in 5 years. :-(
