I only see the stealth hitch option for a 2021 Volvo V90 Cross Country. Is there a non-stealth option?

The Stealth Hitches line are the only ones designed to fit your 2021 Volvo V90 Cross Country so you'll either need the Kit # SH67FR if you plan to use it for a bike rack/cargo carrier, or the Kit # SH67FRT if you want to end up doing some towing with it.
