For a trailer jack similar to the Shelby jack you mentioned I recommend the Fulton #FTJ120W0301. This is a 1,200 pound rated swivel jack with a sidewind handle. It's a weld-on jack with 10 inches of lift.

We did have a customer come back and say that the Fulton jack part #FTJ120W0301 will attach just fine to the pipe mount on the trailer frame where a Shelby jack just like yours was installed.
