Question:
I have an 1.25 inch receiver. My E bike weighs 53 lbs so the Sherpa is only rated for 40 lbs. Thus, I am looking at the NV 2 since it is rated higher. Is there an adapter to change from 1.25 to 2 inch?

Yes, there is an adapter that would change a 1 1/4" hitch receiver to a 2" hitch receiver. But will be some limitations. Any adapter you add will reduce the maximum tongue weight of your hitch receiver by 50%. Many 1 1/4" hitch receivers only have a 200lb maximum tongue weight. If that is your situation the maximum tongue weight would only be 100lbs. That means your Kuat NV 2 and the e-bike you want to carry cannot weigh more than 100lbs total. In this instance you might be able to carry one e-bike but you would not be able to carry two e-bikes.
But the Kuat NV 2.0 Base 2-Bike Platform Rack - 1-1/4" Hitches - Wheel Mount, part # BA12B, is the 1 1/4" version. It has a 60lb weight limit per bike. It will have all the features of you Kuat Sherpa. This should meet your needs.
I have included a product description link and a video review link below.
