Question:
I like the looks of this system but I only trailer over highways, no off-road usage. The security of a different type of hitch is appealing but I am a bit concerned about the viability at 70+ mph on extended trips.

There aren't any speed ratings for the Lock N Roll Articulating Coupler # 336TS502 or Lock N Roll Articulating Hitch for 2" Receivers - 2-1/2" Drop/Rise - Vehicle Side - 11K # 336VS511 but it can be used safely at highways speeds without any worry. The Lock N Roll coupler simply provides the additional flexibility needed at the front of the trailer when towing off road by allowing the connections to pivot; this shouldn't come into play during highway travel and I would have no concerns towing a trailer with a Lock N Roll on extended trips.
