Question:

will the rock tamers #ERT057 work with the weigh safe tru tow weight distribution hitch #WSWD8-2.5 which is the 8 inch with a 2.5 inch shank

The Replacement Hub for Rock Tamers Heavy-Duty, Adjustable Mud Flap System for 2-1/2" Hitches, part # ERT057, is designed to fit around 2-1/2" accessories. Your Weigh Safe True Tow WSWD8-2.5 has a shank for 2-1/2" shank, so fitting around the shank will be no problem.

As for having enough space, that is something that I could not confirm since I could not get the measurements of your shank. However, if there is a distance of at least 1" between the lip of your receiver and the closest part of the shank's drop (the diagonal reinforcement), then the hub will work with your setup.
