I recommend to use the Curt Trailer Hitch Receiver part # C11473 for the 2020 Toyota Prius AWD-E LE which is a confirmed fit for the all wheel drive electric model of the Prius. It also fits the AWD-E XLE model as well. This will give you a Class I 1-1/4" hitch receiver on the Prius. It is a concealed cross tube design so only the receiver portion of the hitch is visible once installed for a nice clean OEM look.
The wiring that is a confirmed fit for the AWD-E LE 2020 Toyota Prius, is the Curt wiring harness part # C69KR which plugs in behind the trim panel in the rear cargo area on the driver's side and passenger side of the Prius. I have attached installation instructions for your reference.
It sounds like you be doing some lightweight towing, the recommended ball mount for the Curt hitch on the Prius is the ball mount part # C45521 which has 2-5/8" Rise and 3-1/4" of drop. If you are not sure how much rise or drop you need to tow level, I have attached a helpful article for your reference.
