I have 8-201 Dexter Ez-lube hubs. I want to carry a complete spare hub assembly with me. What is the difference between these? Will any of them just bolt on? 8-201-9UC3-EZ 8-201-5UC3-EZ K08-201-98

There are a couple of versions of the Dexter Axle EZ-Lube hub and drum assemblies so you really just need to determine which one fits your application best. All 3 options you listed use the same bearings so it boils down to the weight capacity and the inner diameter of the grease seal used:
Part - # 8-201-9UC3-EZ - 5.2K - 6K capacity and seal has ID of 2.125"
Part - # 8-201-5UC3-EZ - 5.2K capacity and seal has ID of 2.125"
Part - # K08-201-98 - 5.2K capacity and seal has ID of 2.25"
Aside from those subtle differences they are all essentially the same. To determine the ID of your current grease seal you can either look for a part number on the seal itself or you can use a digital caliper to measure the spindle where your current grease seal is located.
