The Curt 5th Wheel/Gooseneck Custom Wiring Harness # C56070 referenced in your question will plug into the factory US connector on your 2017 Ford F-250 and the extended 7-Way will work perfectly. The issue with regards to fit on your 2017 model, as you alluded to, is the truck's aluminum body which requires some additional mounting hardware. The needed hardware is included with the Curt # C57008 Harness which is why it is the recommended option.
What you can do to use the more economical Curt Harness # C56070 is simply add the Isolation Hardware Kit # C57007, which includes the needed stainless steel bolts and rubber well nuts to prevent galvanic corrosion when installing the harness on your aluminum truck bed.
