would this cover help to prevent rock chips in the windsheald while towing ?

Hopkins Heavy-Duty ArcticGuard Snow and Ice Windshield Cover # HM17529 would provide some protection against rocks but it is not meant to be used while the vehicle is moving despite the fact that the RV would be blocking most of the wind. It would ultimately result in damage and/or loss of cover.
I recommend taking a look at our selection of vehicle guards and related parts, see link. Or you might also consider some hitch mounted mud flaps such as # RM-4400-102.
