For your wife's 2005 Dodge Dakota, I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver part # 75251 which is a Class III hitch with a 2" receiver tube opening. As long as you do not have a factory trailer hitch then this option will work well for you.
I have attached an install video of this hitch as well as a photo of what it will look like once installed. The install video is on the same generation Dodge Dakota so it will be the same as your 2005.
