I purchased a Kuat Sherpa for my 2017 Audi Q5. Does having a hitch bike rack affect the gas mileage or driving capability on my vehicle?

Hitch bike racks do not affect fuel mileage of a vehicle like your 2017 Audi Q5. If you had a hitch bike rack mounted in a front hitch that would be a different story, but at the rear of a vehicle they do not add any wind resistance so there is no reduction in mileage.
If you were needing a hitch for your 2017 Audi Q5 you'd want the part # 75940 by Draw Tite which is a confirmed fit and would work great with the Kuat Sherpa # SH22G.
