what do you need to do with the sensor if you install hitch if you want to have sensor still work for hatch opening?

The etrailer Round Tube Receiver Hitch # e988551 referenced in your question is confirmed to fit your 2018 Honda Odyssey. The hands-free Liftgate sensor on the vehicle will still operate after installation. You will just simply need to move your foot to either side of the hitch receiver to activate the sensor.
This Class III hitch will provide a 2 inch receiver opening and a gross towing weight capacity of 3,500 pounds, although I also recommend checking the capacity of your vehicle as listed in the owner's manual. I have attached the installation details for you to check out.
If you plan on doing any towing, you can use the Vehicle Wiring Harness # C59496 to install a 4-way connector. This is a hardwire kit that includes a circuit tester to help you find the correct wires behind the Odyssey's tail lights.
