Let's begin with the hitch. Due to its high tongue weight capacity, I'd recommend the Draw-Tite Max-Frame # 75782.
For basic wiring, you'd start with the # 118566 which would provide basic lighting for your utility and boat trailer. For the camper that's equipped with electric brakes, you'll need a brake controller to actuate the brakes. I'd recommend a proportional controller like the Tekonsha Prodigy P2, part # 90885. The P2 will provide safe and predictable braking. The controller is very easy to use and is very highly rated by our customers. To install the controller, you'll need our Brake Controller Installation Kit, part # ETBC7. The kit includes everything needed to install a brake controller, including an adapter that will convert the 4-pole into a 7-way.
You didn't mention the weight of the boat or the utility trailer, so I'm assuming you were wanting the weight distribution/sway control for the camper. When the weight of the trailer is equal or greater than half the weight of the vehicle towing it, we recommend weight distribution.
To choose a weight distribution system, you'll need to first determine the fully loaded and ready to tow tongue weight of your trailer. To that figure, add the weight of any gear stowed in the cargo area of the SUV behind the rear axle. I've linked to an FAQ article that explains how to do this. These combined figures represent the Total Tongue Weight (TTW) of your set-up. The TTW of your trailer should fall as close as possible to the middle of the effective range of the weight distribution system you choose.
A 3000 lb camper would have a tongue weight ranging from 300 to 450 lbs, and given that campers are very susceptible to sway caused by crosswinds or turbulence caused by passing traffic, using a weight distribution system that has an integrated sway control component is highly recommended. The Fastway E2 weight distribution system, part # FA92-00-0600 provides proven weight distribution with highly effective sway control. This system is effective on trailers with tongue weights ranging from 250 to 600 lbs, so it'll be perfect for your needs. The height adjustable shank is included, but you'll need the appropriately sized trailer ball. For a 2 inch ball, use # EQ91-00-6080 or # EQ91-00-6100 for a 2-5/16 inch ball.
If you don't already have a ball mount for the utility and boat trailer, use # D-4 and Hitch Pin and Clip, # PC3. For a 1-7/8 trailer ball, use part # 19260 or # 63845 for a 2 inch ball.
