For your application you need something more like the Fitting for Valterra ABS Fresh-Water Tanks - 90-Degree Elbow # RF907 instead, as the flange on this measures right at 1-3/4".

  Valterra 90-Degree Drain Elbow - Flange x 3/4" Barb - Polypropelene # RF839 will measure 1-11/16 inches so you would also need to account for the connection of the hose, with the space under your shower pan. The GHT (garden hose thread) is one of the connection options which you are correct is not MPT standard size, however the smaller 3/4 inch barb thread is also an option using a hose clamp.   I went out to the warehouse and measured 90 degree drain elbow # RF839. From the top of the opening to the bottom of the elbow is 3.2 inches. To the start of the barbed portion it is 2.2 inches. The overall height is 3.68 inches. I included a picture showing these measurements.

  If you're just cutting a hole in the tank and adding the Valterra 90-Degree Drain Elbow - Flange x 3/4" Barb - Polypropylene Item # RF839 you could do so by sliding it through the hole and using the lip to keep it from coming out and then caulking around the outside and inside for a water-tight seal with some non-toxic caulking from your local hardware store.
