Hey Alan, for your 2021 GMC Sierra 1500 5-3/4 foot bed that is carbon the Demco Hijacker part # DM8550040 is your best option as it is only sliding hitch that can move back far enough to allow your towing setup to make tight turns.
The custom rail kit you'd need for your truck for this hitch would be the Demco part # DM8552034-71 and you'd be set.
