I have a 2021 Dutchman RV voltage 3915 with 7,000 lb axles with ultra lube. You know what size bearing dust covers I will need going to repack bearings

I sure do! 7,000 lbs trailer axles use a grease/dust cap with a 2.72" inner diameter, which means you would need item # K7CAP to access the zerk fittings on the spindle.
To replace bearings on 7,000 lbs axles you'll need the Bearing Kit, 14125A/25580 Bearings, GS-2125DL Seal item # BK3-210. These are sold individually you'll need one per hub.
