Our current coupler, that needs replacing, it is the 2 bolt plate. Will we be able to make this work? Is there any way to buy the old 2 bolt plate option?

I mean theoretically speaking if the plate mates up perfectly to your current coupler you could use the Replacement Remote Coupler Engagement Cable System for Ranch Hitch Adapter # AM3112 work with your older 2-bolt plate, however with two bolts securing it It's not recommended and has not been tested in that way.
A better option would be to replace your entire coupler with a newer Ranch Hitch Universal 5th-Wheel-to-Gooseneck Coupler Adapter # AM3100.
This adapter has a GTW of 24,000 lbs, a tongue weight capacity of 6,000 lbs, and will fit standard 2-5/16" gooseneck hitch balls.
