Is it possible to add a quick disconnect fitting to the PH213321 faucets?

Yes you could add a shower hose quick disconnect to the Shower Faucet part # PF213321 that you referenced. We don't carry it at this time but there's a product called the Rinse Ace Snap 'N Spray Quick Connect and Detachable Shower Hose that was designed specifically for this.
