Will this install in a 2020 Acadia without the factory tow package just like it shows on the installation video? simply remove dummy harness cap and install this wiring harness with some dialectric grease?

Yes, the Curt wiring harness # C56325 does fit your 2020 GMC Acadia. You can verify by finding the connector behind your Acadia's muffler.
If you don't already have a trailer hitch I recommend the Curt # C13293 because it's a much easier install than the other option for your SUV.
