I need a hitch for my trailer that will disconnect when the trailer is on a slope and tension is against attachment.

The Demco EZ latch couplers like the part # DM13205-95 have a mechanism that will release when under tension like you are wanting and will allow the trailer to be jacked up and off the ball as well. This would be a great option.

The big difference between the two couplers you mentioned is that the Demco #DM13205-95 does not come with chain anchors and the part #DM16680-52 does.
