I understand that the towing capacity for this vehicle is much less than the Elantra body/base but is there a 2” receiver hitch available for this make/model? I’ve only been able to find 1.25” available.

At this time there is not a trailer hitch receiver available for your 2012 Hyundai Elantra Touring that has a 2" receiver.
Your only option is going to be one with a 1-1/4" receiver like the Draw-Tite # 24844 which is confirmed to fit your Elantra Touring. This hitch has a 200lb tongue weight rating and a 2000lb trailer weight rating making it a perfect choice for a bike rack like the Thule Camber 2 Bike Rack # TH9058, a cargo carrier, or a ball mount for light duty towing.
