Its there is a 1 1/4 hitch receiver with a rise greater than 5 inches. I am looking for a hitch rise of about 7 or 8 inches

I have a solution for you to be able to get to 7" of total rise.
The Brophy Anti-Rattle Drawbar # BR39FR is a 1-1/4" ball mount that will give you 5-1/2" inches of rise. That is the largest rise that I have been able to find.
You can couple that with the Curt RockerBall Shock Absorbing 2" Hitch Ball # C94CR. It will fit the 3/4" hole in the Brophy ball mount. The ball does sit 1-1/2" taller than a traditional hitch ball thanks to the shock absorbing mechanism. This will also give you a better towing experience with your 2015 Volkswagen Golf.
