Is there any reason I cant use any glass hatch hook straps on my Saris Bones 2? Does it have to be Saris brand?

In this case, no. The Yakima # Y8890155 and Saris Hatch Huggers # SA3035 are pretty similar parts and there won't be any issues using them across manufacturers.
