Question:
Do you have a product that would adapt a 2.5inch hitch receiver to a 3inch hitch such as a Gen-Y Mega Duty?

Due to the high capacity of the 3 inch receiver, an adapter that would allow you to use a 3 inch hitch accessory in a 2-1/2 inch receiver hitch doesn't exist. By necessity, an adapter that lets you use a higher rated accessory in a lower rated hitch would need to extend out, away from the hitch. The leverage that this would apply with the accessory in place with the weight bearing down on it would damage the hitch and/or the hitch attachment points to the vehicle.
If you have two different vehicles, one with a 3 inch receiver, the other with a 2-1/2 inch, your best bet would be to use a Gen-Y Adjustable Ball Mount like part # 325-GH-623 in for the vehicle with the 2-1/2 inch hitch and use the same item in the 3 inch receiver with a reducer sleeve like # BWRHXA2183. Before using a reducer sleeve, I'd recommend putting a thin layer of grease on the reducer sleeve. The sleeve has a nice powder coat, but the constant abrasion from inserting and removing the reducer sleeve will eventually scratch up the powder coat and allow rust to form if the sleeve is left in the hitch for too long without greasing it. If left long enough, it can rust into place.
