So how would the Curtis Class 3 13266 questions affected ground clearance for my 2016 V60 Cross Country? And is the installation/cutting exactly the same, as show in the video for the 2015 V60?

The install of the Curt hitch part # 13266 on your 2016 Volvo V60 will reduce your ground clearance by about 3 inches. The install will be identical to what you mentioned seeing in the install video on a 2015 V60 as well.
The hitch option we offer that will offer the best ground clearance is the Stealth Hitch part # SH97FRT which has a lower hitch assembly that removes when not in use so that you have a totally unobstructed area.
