Question:
Can you tell me the biggest differences and compare the curt hitch vs the draw-tite hitch for the 2020 jeep gladiator? Is there one that is a better option?

There are a couple of pretty big differences between the Draw-Tite Trailer Hitch Receiver # DR64FR and the Curt Trailer Hitch Receiver # CU74FR that fit your 2020 Jeep Gladiator, and I'll go over them so you can decide which trailer hitch is the better option for you.
The first big difference is the install, with the Draw-Tite hitch being a more "traditional" install that secures to your Jeep's trailer frame using a combination of existing hardware and supplied hardware. The Curt hitch, on the other hand, attaches to the Gladiator's rear bumper cover and secures through the rear cross member. I have added a cut out from the linked installation instructions of both hitch which shows the difference. In regards to ease of installation, the Curt has a slight upper hand, but not by a significant margin.
The fact that the Draw-Tite installs on the frame does give it a big advantage in terms of capacities, with a 7,500 lb towing and 1,125 lb tongue weight capacity compared to the Curt's 5,000 lb towing and 500 lb tongue weight capacity. Another big factor is the Draw-Tite can be used with a weight distribution system while the Curt cannot.
Overall, if it were my 2020 Jeep Gladiator, I'd go with the Draw-Tite Trailer Hitch Receiver # DR64FR and this is definitely the route I recommend if you use your Gladiator for towing on any type of regular basis, like if you own a camper. If you are only doing some occasional light towing or need a hitch for accessory use, the Curt Trailer Hitch # CU74FR will be a solid option.
